Green Smoothies

Shock.

This is the response I figure many of you will have as I proceed to tell you that, yes, I Caitlyn Schaefer drink green smoothies. As you may have seen in my last post about Skillet Lasagna, I am the poster child of a "picky eater". As a child I did not eat a single vegetable (if you weren't shocked by the title, then now is your moment). We use to joke and say that ketchup was my vegetable and by we I mean my poor parents who were desperately trying to not melt with embarrassment that their child was one of the most unhealthy eaters out there. As I have grown up (in the past 2 years) I have slowly, but surely started to try new veggies. The two that have been added to my list are: lettuce and broccoli. 

As I have been attempting to eat more healthy, I realize that the amount of veggies I consume has to increase. This is where the green smoothies come in. This is a delicious way for me to get at least 2 cups of vegetables in A DAY. yes.. I said it DAILY. 

I know there are several different recipes out there, but I will share the one that my husband and I love the most. 


GREEN SMOOTHIE:

3/4 c           Almond Milk
2 c              Spinach
1- 1 1/2 c    Strawberries
1                Banana
1 tbsp         Flaxseed

Take all of those ingredients and blend them together until it is smooth.



The reason I love this recipe is because:
  • It is composed of almost only fruits and vegetables. 
  • It is low in calories and high in nutrition. 
  • It is very filling so I stay full until lunch time. 
  • Keeps you hydrated and gives you lasting energy.
  • It is actually really delicious so you don't even realize you are eating vegetables!

We love green smoothies at the Schaefer household. Bring on the V E G G I E S!
